Clean Eating Chicken Marsala Florentine

My husband loves Chicken Marsala. It’s a bit bland for my liking so I tired to do something a little different to give it some more flavor. Here’s my version of a clean eating chicken marsala with a bit more flavor. It turned out very good and I’ve been requested to make it at least once a week now.

Ingredients

1 pound boneless, skinless chicken breast halves
1/4 cup all-purpose flour
salt and pepper to taste
1 Tbs dried oregano
2 Tbs olive oil
2 Tbs. butter
8 ounce sliced mushrooms
3/4 cup sun-dried tomatoes
2 cups packed fresh spinach
1 cup Marsala wine
2 Tbs. garlic, minced
8 ounces angel hair pasta, cooked

Instructions

Place chicken breasts between two pieces of wax paper, and pound to 1/4 inch thick with a meat mallet. Dust chicken with flour, salt, pepper and oregano.

In a skillet, fry chicken in olive oil over medium heat. Cook until done, turning to cook evenly. Set aside, and keep warm.

In the same pan, melt the butter over medium heat; add mushrooms, sun-dried tomatoes, garlic, and Marsala wine. Cook for approximately 10 minutes, stirring occasionally. Mix in spinach, and cook for about 2 minutes. Serve over pasta and chicken.
