Clean Eating Chicken Rice Soup

When you are sick there is NOTHING better than homemade chicken soup.  This is my clean eating go to recipe for Chicken Rice Soup.  

Ingredients

1 tablespoon extra-virgin olive oil
1 medium onion, chopped
2 garlic cloves, minced
2 medium carrots, chopped
2 celery stalks, chopped
1 teaspoon dried thyme
3 tablespoons dried parsley
2 quarts chicken broth
1 cup cooked brown rice
2 cups shredded cooked chicken breasts
Freshly ground black pepper

Instructions

Heat oil in large Dutch oven or pot over medium heat. Add onions, and cook stirring until tender, about 5 minutes. Add garlic and cook, stirring for 1 minute. Add celery and carrots, cooking and stirring until tender, about 5 minutes. Add chicken, chicken broth, rice, salt, pepper and parsley. Stir and reduce heat to low. Let simmer until ready to serve.
