I absolutely LOVE chicken salad, can’t get enough of it. BUT, the mayonnaise gets in the way so I did a lot of research and this is what I came up with for a batch of delicious, yet clean eating chicken salad!!
Enjoy with crackers as a snack, in a sandwich or on a few lettuce leaves as a meal.
4 cups chopped cooked chicken (I poached my chicken breasts and they turned out very moist)
1 cup finely chopped celery
1/2 cup minced red onion
3 tablespoons dill pickle relish
3/4 cup mayonnaise (clean eating mayo, whatever your preference for “clean eating” mayo is. I find that this differs from person to person. I used a vegan mayo. Or you can make your own clean eating mayonnaise by clicking here.)
1 tablespoon dried parsley
Combine ingredients and chill before serving.
