Clean Eating Chicken with Tomatoes, Olives and Capers

This is by far and away one of my favorites.  The flavor in this dish is so intense!!

Ingredients

1 1/2 pound chicken breast cubed
1 medium onion chopped
2 tablespoons olive oil
3 tomatoes, diced
2 tablespoon capers
1/2 cup chopped parsley or 2 tablespoons dried parsley
15 kalamata olives pitted and cut in half
pepper,  to taste
1 teaspoon crushed red peppers
1 cup chicken broth
1 tablespoon garlic, minced

Instructions

In a large pan sauté onions and garlic in oil on medium for about 8 minutes or till golden.

Add chicken and cook thoroughly. All the remaining ingredients cover and cook for about 1 hour.

Serve over jasmine rice.
