Revised on March 1st, 2014.  I made this a bit cleaner and eliminated 2 ingredients that really weren’t necessary.  It turned out even better than it used to be.

I absolutely can not pass up cornbread.  You come to my house and you are almost guaranteed to have cornbread.  Here is my go to clean eating corn bread recipe.

Ingredients

1 1/2 cups buttermilk
1 egg
2 cups cornmeal
1 tsp. baking soda
2 tsp. baking powder
1 tsp. salt

Instructions

Mix all ingredients together.  Pour batter into the prepared baking pan sprayed with olive oil. Bake in a 425° oven for 30 minutes or till golden brown. Cut into squares. Serve warm.

  1. Is cornmeal clean? I thought it carried with it a great risk of being genetically modified, but your recipe doesn’t state to use only organic corn meal.

    • I try not to “overwhelm” people with you must use organic or things like that. My goal is simply to put out recipes that contain only natural ingredients to show people that they can get away from processed foods. By all means if you are concerned with GMO’s then, yes, use organic.

  2. Pam Bechtol says

I added 1/2 cup of Fage Greek yogurt. Delicious recipe! I am new at this, so thank you for keeping it simple! 🙂
