Clean Eating Lentil Salad

Back when I used to work in downtown Cincinnati I used to get this lentil salad at a coffee shop up the street from where I worked.  When I quit working there I found myself craving this salad.  It took me awhile but I finally think I perfected a duplicate.  This is what I call Clean Eating Lentil Salad.

Ingredients

2 cup lentils, cooked
1/2 large cucumber, diced
1 tablespoon parsley, dried
4 ounces feta cheese, crumbled
1 celery stalk, diced
1 tablespoon basil, fresh, chopped
2 green onions, sliced
1 tablespoon dijon mustard
1/2 cup red wine vinegar
2 garlic cloves, minced

Instructions

Cook lentils and let them cool.

Add the next 6 ingredients to the cooled lentils

Mix the remaining ingredients well and pour over the lentil mixture.

Mix well, refrigerate for about an hour and serve.
