Clean Eating Macaroni Salad

Here’s my recipe for clean eating macaroni salad. One of my weakness is a good old-fashioned macaroni salad.  I realize it’s not the “cleanest” thing to eat but I justify it by using the olive oil mayonnaise.  I use a little bit of Djion mustard to give it a little bit of a tangy.

2 cups macaroni, cooked drained
1/2 cup mayonnaise (made with olive oil)
1 tablespoon dijon mustard
1 tablespoon red wine vinegar
1/4 cup red onion, minced
1 tablespoon dill pickle relish
1/4 cup celery, minced
fresh, ground black pepper


Cook the macaroni according to package directions.  Drain and rinse with cold water until macaroni is cool to the touch.

Combine all ingredient and mix well.

Chill for at least one hour before serving.

Servings: 4
