Clean Eating Mayonnaise

I’ve had questions and requests for a clean eating mayonnaise.  Here’s my go to recipe and method.


1 egg (room temp)
1 teaspoon dry mustard
1 teaspoon salt
1/4 cup olive oil
dash cayenne pepper
1 cup olive oil
3 tablespoons white vinegar


Place First 5 ingredients in blender on low speed.

While the machine is blending, SLOWLY pour in another 1/2 c. oil. Add the vinegar and the remaining oil and blend until firm. Store in refrigerator.
