Clean Eating Pepperoni Pizza Casserole

OK, I’ll admit that this is not totally “clean” but it could be made cleaner with Turkey pepperoni.  Sometimes you just need a treat.  Hey, it’s better for me than a real pizza so I’ll still call it “clean”.  It turned out AMAZING!!!

Ingredients

1/2 medium Onion diced
1 tablespoon Garlic minced
1 tablespoon Coconut oil
1 pound Ground beef
1 tablespoon Oregano dried
3 cup Pizza sauce
12 ounce Spaghetti cooked
4 ounce Pepperoni
1/2 cup Green olives
6 slices Mozzarella cheese

Instructions

Brown ground beef with coconut oil, garlic and onions until beef is browned. Drain excess oil.

Preheat oven to 350 degrees.

In the bottom of a 9×13 pan place the cooked pasta. Spread the sauce and beef mixture overtop of the pasta. Put the olives on top of the mixture and then layer with cheese then pepperoni.

Cover pan with foil and bake for 30 minutes. Remove, uncover and return to oven for another 10 minutes allowing the cheese to brown.
