Clean Eating Roasted Rosemary Potatoes

These clean eating roasted rosemary potatoes are very easy to make and absolutely delicious. I usually serve these with dijon chicken and asparagus.

Potatoes also contain a variety of phytonutrients that have antioxidant activity. Among these important health-promoting compounds are carotenoids, flavonoids, and caffeic acid, as well as unique tuber storage proteins, such as patatin, which exhibit activity against free radicals.

4 red potatoes — quartered
1 tablespoon olive oil
1 tsp garlic salt
1 tsp dried rosemary
Salt and freshly ground pepper, to taste


Heat oven to 400 degrees. Toss the potatoes, olive oil, garlic and rosemary in large baking dish. Roast 1 hour or until evenly browned and crisp, carefully turning potatoes and rearranging every 20 minutes. Season with salt and pepper.
