Clean Eating Chicken Cacciatore

Chicken Cacciatore has been one my favorites since I was a little girl.  Here’s my clean eating version.

Ingredients

2 tablespoons olive oil
2 pounds boneless chicken breast, cubed
Salt and pepper to taste
1 medium onion, diced
1 cup cooking wine
16 ounces clean eating spaghetti sauce, no additives, no sugar
8 ounces whole grain spaghetti
Grated parmesan to taste
Chopped fresh parsley

Instructions

Heat oil in heavy medium sized skillet over medium heat.

Season chicken breast with salt and pepper to taste.

Add to skillet and cook until light brown, about 2 minutes each side.

Remove chicken from skillet.

Add onion to skillet and saute until soft, about 5 minutes.

Stir in spaghetti sauce, and wine; reduce heat to medium-low.

Add chicken breasts and simmer until no longer pink, about 8 minutes.

Divide spaghetti among plates, place chicken on top and spoon over sauce.

Sprinkle with grated parmesan and chopped parsley.

Yields: 4 Servings
