clean eating pumpkin spice latte[4]It’s that time of year.  Starbucks is serving their Pumpkin Spice Lattes!!  I know you are all excited BUT it’s anything but “clean” and at 310 calories for a grande……..  well, it’s just not worth it to me, so here’s my clean eating version of a Pumpkin Spice Latte

Ingredients

2 cups skim milk or soy/almond milk if you are also vegan or dairy free
2 tablespoons canned pumpkin puree
1 – 2 tablespoons agave nectar
2 Tablespoons quality vanilla extract
1/2 teaspoon pumpkin pie spice
1-4 shots espresso or very strong coffee

Instructions

Brew your espresso or very strong coffee.

While it’s brewing, in a small saucepan combine half&half, pumpkin, sugar and pie spice, whisking gently over medium heat until well blended and very hot, but NOT boiling.

Remove the mixture from the heat and add 2 tablespoons of high quality vanilla extract.

Carefully pour the hot mix into a blender or  an immersion and blend until frothy. Pour about a cup of the frothy pumpkin milk mixture into your favorite latte mug and add coffee to the top. Dust with a touch of pumpkin pie spice for a little kick.

Here’s the blender I use.  I highly recommend them, especially great for soups.
