Ingredients

1 tablespoon olive oil
1 large garlic clove, minced
1 small onion, diced
1 cup mushrooms, sliced
9 ounce (bag) spinach, shredded
1/4 teaspoon pepper fresh, ground
1/2 cup cheddar cheese, shredded
1/2 cup cottage cheese
3 cups brown rice cooked
2 tablespoon lemon juice
paprika to taste
1/2 cup mozzarella cheese mozzarella cheese

Instructions

Preheat oven to 400. Grease an 8″ square baking dish.

Heat oil in a 10 inch skillet. Add garlic, onion and mushrooms and cook, stirring, for 1 minute. Add spinach and stir and cook about 2 minutes, or until spinach wilts. Stir in pepper, cheddar cheese, and cottage cheese and set aside.

Make a layer of rice on bottom of baking dish. Spoon spinach cheese mixture evenly over rice. Top with mozzarella cheese and sprinkle with paprika. Bake for 8 to 10 minutes then broil for about 1 minute, or until cheese is bubbly and brown. Cut into squares and serve very hot.
