Clean Eating New Delhi Turkey Meatloaf

This has been one of my favorites for many, many years.  I haven’t made it in a long time but wanted to make sure to get this on the blog so I made it the other day.  This is called clean eating new delhi turkey meatloaf.  A very healthy alternative to your standard beef meatloaf.  I realize the picture does not look very appetizing but I can assure you that it’s tasty.

Ingredients

2 tablespoon olive oil
1 medium onion, chopped
1 clove garlic, minced
1 teaspoon curry powder
1/2 teaspoon ginger ground
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon coriander, ground
1/4 teaspoon cumin
1/4 teaspoon cayenne
1 pound ground turkey
1 medium egg, beaten
1 tablespoon dijon mustard

Instructions

Preheat oven to 325 degrees. Lightly coat a 9 x 5 inch loaf pan with a nonstick vegetable spray.

Heat oil and sautee olive oil with onions and garlic. Add curry, ginger, salt, pepper, coriander, cumin, cinnamon and cayenne. Saute for 5 mintues. Stir occassionally.

Combine the turkey, onion mixture, egg and mustard in a large bowl.

Place this mixture in the loaf pan, press down to make the top flat.

Bake for 80-90 minutes.

Servings: 6
