Clean Eating Turkey-Barley Stew

1 pound ground turkey
1 medium onion, diced (1/2 cup)
2/3 cup barley, uncooked
2 cups chicken broth
1/2 teaspoon oregano, dried leaves
1/4 teaspoon salt, optional
1/4 teaspoon pepper
1 can (8 oz) tomato sauce
1 can (16 oz) tomatoes, canned, diced
1 package frozen mixed vegetables
2 cloves garlic
1 tablespoon olive oil


Heat olive oil with onions and garlic in a skillet. Add ground turkey and heat until browned. Put remaining ingredients in a large stock pot and cook over a medium heat until barley has cooked thoroughly.
